A Healthy Approach

It seems as if everyone at my job is on a health food kick.  I think that it's great because I personally believe that some of the diseases and medical issues that our nation is facing has to do with our diets.  I have tried to be a pescatarian (a vegetarian that includes fish in their diet) and I considered going vegan, but ultimately I would be drawn back in by a piece of chicken or a burger.  I don't think that as of now I will be making that type of drastic change in my life, but I will say that I plan to add more vegetables (my fruit intake is already huge) and attempt to try and add some vegetarian and vegan options on a regular basis.

With that in mind, when one of my co-workers approached me about taking a healthy cooking class, I was a little skeptical, but also desired to see what would happen.  We were headed to the Collins Wellness Center (www.collinswellnesscenter.com), with Chef Diane Collins.  If you know anything about my co-workers, you will also know that they are a ton of fun!
I have to say that I had a great experience.  We ate a ton of veggie and vegan options and by the end of the night I was surely full.  Chef Diane demonstrated products and made us an entire meal!  The class started with two great juiced drinks that she prepared.  Both were really good.


Part of what made the class a lot of fun was that we participated in preparing the dishes.  One of my jobs was to assist in chopping up onions. 
The best thing that we created was a uncooked oatmeal parfait. d  I It was like dessert.  Chef Diane took raw oatmeal, and allowed it to soak in apple juice and added yogurt and fruit.  It would be great to make overnight and grab on the way out of the door in the morning.


I also took a few pics of some of the products that I found to be super tasty.  These are items that I know that I want to buy in the very near future.


This breakfast dish was uncooked and SUPER TASTY!  I can't wait to make it.
