Strange Things That You Hear When You're Single

I was supposed to be making a "Favorite Things" video, when I got a little side tracked.  For some reason this story popped into my head.  So...I might as well share!  Follow the YouTube Link for an HD (720) version.

A Healthy Approach

Chopping onions....and I like my thrifted watch in this ensemble as well! :)
It seems as if everyone at my job is on a health food kick.  I think that it's great because I personally believe that some of the diseases and medical issues that our nation is facing has to do with our diets.  I have tried to be a pescatarian (a vegetarian that includes fish in their diet) and I considered going vegan, but ultimately I would be drawn back in by a piece of chicken or a burger.  I don't think that as of now I will be making that type of drastic change in my life, but I will say that I plan to add more vegetables (my fruit intake is already huge) and attempt to try and add some vegetarian and vegan options on a regular basis.

With that in mind, when one of my co-workers approached me about taking a healthy cooking class, I was a little skeptical, but also desired to see what would happen.  We were headed to the Collins Wellness Center (www.collinswellnesscenter.com), with Chef Diane Collins.  If you know anything about my co-workers, you will also know that they are a ton of fun!
I have to say that I had a great experience.  We ate a ton of veggie and vegan options and by the end of the night I was surely full.  Chef Diane demonstrated products and made us an entire meal!  The class started with two great juiced drinks that she prepared.  Both were really good.

Part of what made the class a lot of fun was that we participated in preparing the dishes.  One of my jobs was to assist in chopping up onions.
The best thing that we created was a uncooked oatmeal parfait. d  I It was like dessert.  Chef Diane took raw oatmeal, and allowed it to soak in apple juice and added yogurt and fruit.  It would be great to make overnight and grab on the way out of the door in the morning.

I also took a few pics of some of the products that I found to be super tasty.  These are items that I know that I want to buy in the very near future.

This breakfast dish was uncooked and SUPER TASTY!  I can't wait to make it.

Overall, I had a great night and I am now a believer that super healthy food can be tasty!  If you're interested in learning more, I encourage you to contact Chef Diane at www.collinswellnesscenter.com and set up an appointment.  Like me, maybe you can consider adding one vegetarian day into your week.  I am confident that the sacrifice will be well worth it!

Family...well close enough

If I could go back in time and tell myself what is and what would be important, I'd have so much to say. I'd let nervous and self conscience me know that God has heard your prayers and you won't EVER BE THE SAME. I'd tell another me to choose the people that you invest in wisely as to avoid a ton of heartache and general hurt.

Then there would be a lesson that I've found to be so valuable. Know that you are so very loved. Know this.

Before memorial day, I was down because I knew that I would have to spend the holiday alone. It's all good though! I'm okay with being alone. But sometimes, you just don't want to do another holiday fixing 2 hotdogs on a grill for yourself so that you can say that you celebrated. :/

But, God has given me amazing "family" through my friends. I wasn't alone. This is turning into one of the better holidays that I've experienced in years. For that, I am thankful. More importantly, I'm reminded that in this big wide world...I'm known and loved. Since it's memorial day...that will be etched in my memory.
